Ingredients

1/2 c
butter, room temperature
2 c
sugar
1/3 c
cocoa, unsweetened
1 tsp
vanilla
4
eggs one at a time
2 c
all purpose flour
1 tsp
baking powder
1 tsp
cloves
1 tsp
nutmeg
1 tsp
cinnamon
1/2 c
cold coffee
1 c
pecans, chopped
1 c
raisins
1 c
creamed mashed irish potatoes (room temp)

How to Make Cline Family Chocolate Irish Potato Cake

Step-by-Step

  • 1Cream the butter & sugar. Add cocoa & vanilla. Then add eggs one at a time beating after each.
  • 2Sift flour, baking powder and spices
  • 3Add to creamed mixture alternating with coffee.. Add raisins and nuts. Fold in mashed potatoes making sure no lumps. (Thats the original directions. I plan to try adding them into the creamed ingredients before the dry ingrediients this year) Pour batter in to 2 greased and floured pans. (I use Baker Joy)
    Bake in 350* oven for 30 - 40 minutes until toothpick comes out clean.
  • 4When completely cool Frost with Chocolate confectioner sugar icing.
