Ingredients
- 1/2 cup butter, room temperature
- 2 cups sugar
- 1/3 cup cocoa, unsweetened
- 1 teaspoon vanilla
- 4 - eggs one at a time
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 cup cold coffee
- 1 cup pecans, chopped
- 1 cup raisins
- 1 cup creamed mashed irish potatoes (room temp)

Step 1Cream the butter & sugar. Add cocoa & vanilla. Then add eggs one at a time beating after each.

Step 2Sift flour, baking powder and spices

Step 3Add to creamed mixture alternating with coffee.. Add raisins and nuts. Fold in mashed potatoes making sure no lumps. (Thats the original directions. I plan to try adding them into the creamed ingredients before the dry ingrediients this year) Pour batter in to 2 greased and floured pans. (I use Baker Joy) Bake in 350* oven for 30 - 40 minutes until toothpick comes out clean.

Step 4When completely cool Frost with Chocolate confectioner sugar icing.
