christmas poke cake

My mom found this as a Jello advertisement in a magazine back when I was a little girl. She made it once around Christmas time and I loved it so much that I asked for one every year as my Birthday Cake. Everyone loves this cake and it is so pretty around the holidays!

Ingredients

  • 2 - baked 9" round white cake layers, cooled
  • 2 cups boiling water
  • 1 package (4 oz.) red jello
  • 1 package (4 oz.) green jello
  • 1 - (8 oz.) container of cool whip

How To Make christmas poke cake

  • Step 1
    Remove the cakes from cake pans and cool.
  • Step 2
    Place cooled cake layers, top sides up in 2 clean 9 inch round cake pans.
  • Step 3
    Pierce layers with a large fork at 1/2 inch intervals. (I use a chop stick or skewer)
  • Step 4
    Stir 1 cup of boiling water into each flavor of dry jello mix in separate bowls at least 2 minutes until completely dissolved.
  • Step 5
    Carefully pour red gelatin over 1 cake layer and green gelatin over the second cake layer. Refrigerate 3 hours.
  • Step 6
    Dip 1 cake pan in warm water for 10 seconds; unmold onto serving plate. Frost with cool whip. Refrigerate for 1 hour or more before serving.
