chocolate zucchini cake
Chocolaty, Slight Hint of Spice, Very Moist, Very Addictive, No Icing Required. I love this cake, it's slightly different with the addition of cinnamon and cloves. I made this cake and took to work one day when we had a visiting programmer. He could not stay out of this cake. Recipe Source:Hoosier Cookbook, copyright 1976

Ingredients
- 1/2 cup soft margarine
- 1/2 cup vegetable oil
- 1 3/4 cups sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1/2 cup buttermilk or *sour milk
- 2 1/2 cups flour
- 4 tablespoons cocoa
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 2 cups zucchini, finely grated
- 1/2 to 1 cups chocolate chips, (i use 1 cup)
- - *to make sour milk or buttermilk: in glass measuring cup, place 1 1/2 tsp. lemon juice or vinegar, add enough milk to meausre 1/2 cup, let stand 5 minutes.
How To Make chocolate zucchini cake

Step 1Cream margarine, oil and sugar. Add eggs, vanilla and sour milk; beat mixture until throughly combined. Mix in flour, cocoa, baking powder, baking soda, cinnamon and cloves. Stir in zucchini. Pour into greased 9x13 baking dish. Sprinkle top of cake with chocolate chips. Bake at 325 degrees F. for 45 minutes until toothpick inserted in center comes out clean.
