chocolate zucchini cake

I add a bit more zucchini and the first time I tried this I was amazed that you couldn't tell unless you look hard that there is zucchini in it. Makes the cake a bit more healthy than others.My 5 yr old granddaughter asks for this cake and then tries to eat it all!

Ingredients

  • 1/2 cup margarine or butter
  • 1/2 cup vegetable oil
  • 1 3/4 cups sugar
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour milk
  • 2 1/2 cups flour
  • 4 tablespoons unsweetened cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2 cups shredded zucchini
  • 1 cup chocolate chips

How To Make chocolate zucchini cake

  • Step 1
    Prepare 9x13 baking dish and heat oven to 325 degrees. Cream together: margarine, vegetable oil and sugar.
  • Step 2
    Add: eggs, vanilla and sour milk. (if needed you can add a teaspoon of vinegar to fresh milk to sour it) Mix well.
  • Step 3
    Mix in: flour, cocoa, baking powder and soda, cinnamon and cloves. Stir in shredded zucchini.
  • Step 4
    Pour into prepared pan. Sprinkle top with chocolate chips. Bake at 325 for about 45 minutes or until a toothpick comes out clean.
  • Step 5
    No frosting is necessary and when I bake this the pan barely cools before someone is into it! Keep leftovers refrigerated.
