I add a bit more zucchini and the first time I tried this I was amazed that you couldn't tell unless you look hard that there is zucchini in it. Makes the cake a bit more healthy than others. My 5 yr old granddaughter asks for this cake and then tries to eat it all!

How to Make Chocolate Zucchini Cake

Step-by-Step

  1. Prepare 9x13 baking dish and heat oven to 325 degrees.

Cream together: margarine, vegetable oil and sugar.
  2. Add: eggs, vanilla and sour milk. (if needed you can add a teaspoon of vinegar to fresh milk to sour it) Mix well.
  3. Mix in: flour, cocoa, baking powder and soda, cinnamon and cloves.

    Stir in shredded zucchini.
  4. Pour into prepared pan. Sprinkle top with chocolate chips.

Bake at 325 for about 45 minutes or until a toothpick comes out clean.
  5. No frosting is necessary and when I bake this the pan barely cools before someone is into it!

    Keep leftovers refrigerated.
