I add a bit more zucchini and the first time I tried this I was amazed that you couldn't tell unless you look hard that there is zucchini in it. Makes the cake a bit more healthy than others.My 5 yr old granddaughter asks for this cake and then tries to eat it all!

Ingredients

1/2 c
margarine or butter
1/2 c
vegetable oil
1 3/4 c
sugar
2
eggs
1 tsp
vanilla extract
1/2 c
sour milk
2 1/2 c
flour
4 Tbsp
unsweetened cocoa
1/2 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
cinnamon
1/2 tsp
cloves
2 c
shredded zucchini
1 c
chocolate chips

How to Make Chocolate Zucchini Cake

Step-by-Step

  • 1Prepare 9x13 baking dish and heat oven to 325 degrees.

    Cream together: margarine, vegetable oil and sugar.
  • 2Add: eggs, vanilla and sour milk. (if needed you can add a teaspoon of vinegar to fresh milk to sour it) Mix well.
  • 3Mix in: flour, cocoa, baking powder and soda, cinnamon and cloves.

    Stir in shredded zucchini.
  • 4Pour into prepared pan. Sprinkle top with chocolate chips.

    Bake at 325 for about 45 minutes or until a toothpick comes out clean.
  • 5No frosting is necessary and when I bake this the pan barely cools before someone is into it!

    Keep leftovers refrigerated.
