chocolate tofu cookies
I know,Tofu,Yuck. Well,let me tell you this makes the best cookies ever. They come out super moist and soft. If you didn't know there was tofu in them, you just wouldn't know. I made these as an experiment yesterday, and my family loved them. This is how I'm making cookies from now on.

Ingredients
- 8-10 ounces tofu( firm or extra firm, drained)
- 2 cups soy milk (plain , vanilla or chocolate)
- 1 package favorite flavor cookie mix ( i used pillsbury chunky chocolate)
How To Make chocolate tofu cookies

Step 1Preheat oven to 350 degrees.Break tofu up into pieces in a blender or food processor. Add milk and blend until smooth. Add hlf of tofu mixture to cookie mix and stir until it is well incorporated into mixture. Follow box directions for consistency of mix, adding more of tofu mixture a little at a time to get to proper consistency.

Step 2Bake according to package directions, or until a toothpick inserted comes out clean. If they need additional time, add in 5 minute increments.

Step 3When done, cool completely and frost with your favorite flavor of frosting, or leave as is and enjoy.

Step 4**** You can also use this method with your favorite cake mix. Bake at 350 degrees for 20 minutes or until toothpick inserted in center comes out clean. ( it can take as long as 30 minutes, but check every 5 minutes after the 20 minutes) If you make cupcakes , mini's take 20 minutes and regular cupcakes take approximately 25 minutes .
