Ingredients
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 2 - eggs
- 1 cup buttermilk
- 1 cup strong black coffee
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 3/4 cups all purpose flour
- PEANUT BUTTER ICING
- 4 cups powdered sugar
- 1 stick butter
- 1 cup creamy peanut butter
- 1/3 cup cream
- 1 teaspoon vanilla extract
How To Make chocolate cupcakes with peanut butter icing

Step 1Combine all dry ingredients and blend thoroughly.

Step 2Add wet ingredients and beat until smooth. * coffee should be at room temperature as well, the eggs.

Step 3Bake @350 for 20 minutes.

Step 4Using mixer, whip icing ingredients until smooth & light. Add powdered sugar if needed to achieve consistency required.
