Ingredients

  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 - eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all purpose flour
  • PEANUT BUTTER ICING
  • 4 cups powdered sugar
  • 1 stick butter
  • 1 cup creamy peanut butter
  • 1/3 cup cream
  • 1 teaspoon vanilla extract

How To Make chocolate cupcakes with peanut butter icing

  • Step 1
    Combine all dry ingredients and blend thoroughly.
  • Step 2
    Add wet ingredients and beat until smooth. * coffee should be at room temperature as well, the eggs.
  • Step 3
    Bake @350 for 20 minutes.
  • Step 4
    Using mixer, whip icing ingredients until smooth & light. Add powdered sugar if needed to achieve consistency required.
