chocolate cinnamon zucchini cake

I seriously overhauled a recipe as I am always trying to bake things in a healthier way. This came out better than I thought!

Ingredients

  • 1/4 cup butter or margarine softened
  • 3/4 cup unsweetened applesauce
  • 1/2 - brown sugar unpacked
  • 2 tablespoons sugar
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup milk- i've used 1% and skim
  • 1/2 teaspoon vinegar or lemon juice
  • 2 1/2 cups flour
  • 2 cups grated zucchini
  • 1/2 cup semi sweet chocolate chips

How To Make chocolate cinnamon zucchini cake

  • Step 1
    Heat oven to 325. Add the 1/2 tsp vinegar or lemon juice to the skim milk and set aside. You want the milk to curdle.
  • Step 2
    Blend the first 6 ingredients together. Mix in the dry ingredients, then the milk. Batter will be somewhat thick.
  • Step 3
    Fold in zucchini. Spray a 13x9 pan with cooking spray, pour and spread batter.
  • Step 4
    Sprinkle chocolate chips over top of cake. Bake for 40-50 mins. or until done.
