I seriously overhauled a recipe as I am always trying to bake things in a healthier way. This came out better than I thought!

Add to Grocery List

  • 1/4 c
    butter or margarine softened
  • 3/4 c
    unsweetened applesauce
  • 1/2
    brown sugar unpacked
  • 2 Tbsp
  • 2
  • 1 tsp
  • 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 1/2 tsp
  • 4 Tbsp
    unsweetened cocoa powder
  • 1/2 c
    milk- i've used 1% and skim
  • 1/2 tsp
    vinegar or lemon juice
  • 2 1/2 c
  • 2 c
    grated zucchini
  • 1/2 c
    semi sweet chocolate chips

How to Make Chocolate Cinnamon Zucchini Cake


  1. Heat oven to 325. Add the 1/2 tsp vinegar or lemon juice to the skim milk and set aside. You want the milk to curdle.
  2. Blend the first 6 ingredients together. Mix in the dry ingredients, then the milk. Batter will be somewhat thick.
  3. Fold in zucchini. Spray a 13x9 pan with cooking spray, pour and spread batter.
  4. Sprinkle chocolate chips over top of cake. Bake for 40-50 mins. or until done.
