Ingredients

  • 1/2 cup butter ( 1 stick ) softened
  • 1 3/4 cups sugar
  • 1/2 cup vegetable oil
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup buttermilk
  • 2 cups peeled and shredded zucchini
  • 2 cups semi-sweet chocolate chips

How To Make chocolate chip zucchini cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large mixing bowl cream together the butter and sugar. Beat in eggs and vanilla.
  • Step 3
    Combine the dry ingredients in a separate bowl and add to the creamed mixture alternately with the buttermilk. Stir in the zucchini.
  • Step 4
    Pour into a greased 9 by 13 inch pan. Sprinkle with chocolate chips.
  • Step 5
    Bake at 350 degrees for 45 - 50 minutes or until a toothpick inserted comes out clean. Cool on a wire rack
