    butter ( 1 stick ) softened
  • 1 3/4 c
    sugar
  • 1/2 c
    vegetable oil
  • 2
    eggs
  • 1 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 2 Tbsp
    cocoa powder
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    ground cloves
  • 1/2 c
    buttermilk
  • 2 c
    peeled and shredded zucchini
  • 2 c
    semi-sweet chocolate chips

How to Make CHOCOLATE CHIP ZUCCHINI CAKE

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl cream together the butter and sugar. Beat in eggs and vanilla.
  3. Combine the dry ingredients in a separate bowl and add to the creamed mixture alternately with the buttermilk. Stir in the zucchini.
  4. Pour into a greased 9 by 13 inch pan. Sprinkle with chocolate chips.
  5. Bake at 350 degrees for 45 - 50 minutes or until a toothpick inserted comes out clean. Cool on a wire rack
