cherry delight cheesecake

Years ago my Mother purchased a cookbook called A Woman's Paradise of Recipes. It is a compilation of recipes from the kitchens of the Associated Women For Pepperdine College and it was published in 1962. My cookbook is very worn and tired looking but the recipes in it are still tried and true. I have chosen one of my favorite to share with you all. I slightly tweaked the recipe by adding 2 ounces more Cream Cheese and an additional 1/2 tsp. Vanilla. This is an elegant dessert for any occasion.

Ingredients

  • 2 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 1 stick plus 3 tablespoons butter
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1 large 16 oz. container whipped topping
  • 1 can comstock cherry pie filling

How To Make cherry delight cheesecake

  • Step 1
    Mix first 3 ingredients together and press in a 9 inch pie plate.
  • Step 2
    Bake for 10 minutes at 350 degrees. Cool on wire rack.
  • Step 3
    Blend together powdered sugar, cream cheese and vanilla. Spread on cooled crust.
  • Step 4
    Sprinkle chopped Walnuts over Cream Cheese mixture.
  • Step 5
    Spread the Whipped Topping over the Chopped Walnuts saving enough to decorate edges and center.
  • Step 6
    Spread the Cherry Filling over the Whipped Topping.
  • Step 7
    Decorate edges with remaining Whipped Topping with a dollop in center if so desired. Sprinkle dollop with chopped Walnuts.
  • Step 8
    Cut and enjoy!
