From the time I was a little girl, I was frequently called "Carrot Top". When I was older and got married and had a child with red hair, he got teased and got called "Carrot" by a few people.My oldest brother teased him by saying:"Do you know why your hair is red?" (Answer: "it's because your brains are rusty!") He didn't always care for that, but now it's fun. I tried a great recipe for carrot cake which I have made changes to and I love it. My friends at church enjoyed it at coffee hour too. So now I am posting my version and calling it "CARROT TOP'S CARROT CAKE".
1Preheat oven to 350 degrees. Grease and flour a baking pan 9" X 13". I used a baking dish so I reduced the oven to 325 degrees when I put the cake in to bake. Bake 35-40 minutes. Check the cake with a tester or tooth pick and touch the top to be sure it springs back.
2First combine dry ingredients in medium bowl. Blend together the liquid ingredients in a large bowl and beat well. Add dry and wet ingredients, and mix in the fruit, carrots and nuts.
3Frosting is optional, as this is such a good cake, you can just serve it with powdered sugar on top, or a regular vanilla frosting, CREAM CHEESE FROSTING is my favorite.
4Make the frosting with butter, cream cheese and confectioners' sugar and vanilla. Cool cake completely and then frost, and refrigerate always!
5This was so good I am baking another one for a friend for her birthday. I made two layers for her, and it took about 35 mins. to bake.
