1Cream butter,gradually add powder sugar,beating well at medium speed on mixer.Add eggs,one at a time, beating after each addition.Combine flour, soda,salt,cinn,add to creamed mixture;blend well.Stir in carrots,wheat germ,pecans, lemon juice,vanilla extract.Spoon batter into a greased and floured 10" tube pan or bundt pan.Bake at 325* for 1 hour and 10 mins.---Makes 1-10inch cake.
2 tbsp.lemon juice
1/2 tsp.vanilla extract
11/4 cup sifted powder sugar.
Combine 1st 3 ingredients in a small bowl;stir in sugar.Mix well. Drizzle over warm cake.
