I HAVE NOT MADE THIS CAKE YET !! IT IS TOTALY DIFFERENT FROM THE POUND CAKES THAT I HAVE MADE OVER THE YEARS.SO LET ME KNOW WHAT YOU THINK OF THIS CAKE.ENJOY

Ingredients

  • - 1 cup butter,soften
  • - 1 (16 oz) pkg.powder sugar,sifted
  • - 6 large eggs
  • - 3 cups flour
  • - 11/2 tsp.baking soda
  • - 1 tsp.salt
  • - 2 tsp.cinn.
  • - 3 cups grated carrots (about lb).
  • - 1/4 cup wheat germ
  • - 11/2 cups chopped pecans (optional)
  • - 1 tbsp. lemon juice
  • - 1 tbsp.vanilla extract
  • - (lemon glaze follows)

How To Make carrot pound cake

  • Step 1
    Cream butter,gradually add powder sugar,beating well at medium speed on mixer.Add eggs,one at a time, beating after each addition.Combine flour, soda,salt,cinn,add to creamed mixture;blend well.Stir in carrots,wheat germ,pecans, lemon juice,vanilla extract.Spoon batter into a greased and floured 10" tube pan or bundt pan.Bake at 325* for 1 hour and 10 mins.---Makes 1-10inch cake.

    Lemon Glaze* 2 tbsp.butter,melted 2 tbsp.lemon juice 1/2 tsp.vanilla extract 11/4 cup sifted powder sugar. Combine 1st 3 ingredients in a small bowl;stir in sugar.Mix well. Drizzle over warm cake.
