What can I say? Was in the mood for plain old carrot cake but, being me, I decided on a whim to combine the cake and frosting elements in one. And oh my gosh, yum.

Ingredients

  • 2 c
    wheat flour
  • 1 tsp
    baking soda
  • 1 Tbsp
    baking powder
  • 1 Tbsp
    cinnamon
  • 1/2 Tbsp
    ginger powder
  • dash(es)
    salt
  • 1 c
    applesauce, unsweetened
  • 1 1/2 c
    carrot, shredded
  • 1 c
    water
  • 8 oz
    cream cheese, room temperature
  • 1/2 c
    honey

How to Make Carrot Cream Cheese Swirl Cake

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, combine all dry ingredients and spices. Add the applesauce, shredded carrot, and water until well-mixed. Set aside
  3. Using a standing mixer, with the wire whisk attachment, beat together the cream cheese and honey for a few minutes or until well-combined. Scrape the sides if necessary.
  4. Spread the carrot cake batter in a greased 9x13 baking pan. Pour spoonfulls of the cream cheese mixture on top.
  5. Swirl the two batters together in the pan using a knife. Bake for 25 minutes. Allow to cool completely before serving.
