What can I say? Was in the mood for plain old carrot cake but, being me, I decided on a whim to combine the cake and frosting elements in one. And oh my gosh, yum.

Ingredients
- 2 cups wheat flour
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 1/2 tablespoon ginger powder
- dash salt
- 1 cup applesauce, unsweetened
- 1 1/2 cups carrot, shredded
- 1 cup water
- 8 ounces cream cheese, room temperature
- 1/2 cup honey
How To Make carrot cream cheese swirl cake

Step 1Preheat oven to 375 degrees.

Step 2In a large mixing bowl, combine all dry ingredients and spices. Add the applesauce, shredded carrot, and water until well-mixed. Set aside

Step 3Using a standing mixer, with the wire whisk attachment, beat together the cream cheese and honey for a few minutes or until well-combined. Scrape the sides if necessary.

Step 4Spread the carrot cake batter in a greased 9x13 baking pan. Pour spoonfulls of the cream cheese mixture on top.

Step 5Swirl the two batters together in the pan using a knife. Bake for 25 minutes. Allow to cool completely before serving.
