carrot cake with cream cheese frosting
This recipe is based on a recipe that my MIL gave to me about 45 years ago when I was a new bride. It was my hubby's favorite and she wanted to make sure that I could make it. I've tweaked it over the years with a few additions. It's a deliciously moist cake with lots of flavor. Enjoy!

Ingredients
- 1 1/4 cups cooking oil (i use canola)
- 2 cups sugar
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon black walnut flavoring
- 2 cups self-rising flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 3 cups shredded carrots
- 1 can crushed pineapple, 20 ounce size, well drained (reserve about 1/2 cup of the juice and set aside)
- 1 cup black walnuts
- PINEAPPLE CREAM CHEESE FROSTING
- 1 package cream cheese, softened (8 ounce size)
- 1/2 cup butter, softened
- 1 teaspoon pure vanilla extract
- 1 pound confectioners' sugar
- reserved pineapple juice
How To Make carrot cake with cream cheese frosting

Step 1Preheat oven to 350 degrees. Grease and flour tube or bundt pan and set aside.

Step 2Whisk together self-rising flour, baking soda, salt and cinnamon and set aside.

Step 3Beat together oil and sugar until well mixed. Add eggs one at a time, beating well after each addition. Add flavorings and mix well.

Step 4Add flour mixture a little at a time and mix until well incorporated (batter will be stiff). By hand, stir in carrots, pineapple and nuts.

Step 5Pour batter into prepared pan and bake for 1 hour to 1 hour and 10 minutes or until cake tests done (in my oven it takes only about an hour). Allow to cool and carefully remove from pan. Frost cooled cake with pineapple cream cheese frosting (recipe directions to follow). Optional: Garnish with more black walnuts, if desired.

Step 6For the Frosting: Beat together cream cheese, butter, and vanilla. Add confectioner's sugar a little at a time. Add reserved pineapple juice a little at a time and beat until frosting reaches spreading consistency. If frosting is too thin, just beat in some more confectioner's sugar.
