Ingredients
- CAKE ROLL
- 3/4 cup flour
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon each ground ginger and salt
- 1/4 teaspoon ground nutmeg, cloves, and cardamon
- 3 large eggs
- 1/2 cup sugar
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 2 cups finally shredded carrots
- CREAM CHEESE FILLING
- 1 cup powdered sugar plus more for rolling
- 8 ounces cream cheese softened
- 1 stick butter softened
- 1 teaspoon vanilla extract
How To Make carrot cake roll up

Step 1For the cake Preheat oven 375 degrees. Line a jelly roll pan with parchment paper.

Step 2Whisk together the flour, baking powder, ginger, salt, nutmeg, cloves, and cardamon. In a separate bowl mix the eggs, and sugar 1 minute. Add the oil, vanilla and carrots. Fold in the flour mixture. Spread the batter over the parchment paper then bake for 10 to 15 minutes. Carefully lift the cake from the pan by the parchment paper and roll from short end and let cool until it reaches room temperature.

Step 3Meanwhile mix the cream cheese, powdered sugar, butter and vanilla together. Add a little milk if needed to make it a creamy consistency but not too runny.

Step 4Spread the filling inside the cake and roll up again. Roll in a little powdered sugar. Refrigerate for 1 hour. Cut into rounds.
