I made this for my wedding cake top layer (I do wedding cakes)then took it with us on our 4 day honeymoon in 2001 to Longbeach, WA. Every nite ate our cake for desert.

Ingredients
- 1 1/2 cups oil
- 2 cups sugar
- 3 large eggs
- 2 cups carrots, grated
- 1 cup pineapple, crushed, drained
- 1/2 cup coconut, flaked
- 2 1/2 cups all purpose flour
- 1 cup chopped nuts
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamin
- 1 teaspoon vanilla

Step 1HEAT OVEN 350, Grease 9 X 13 baking dish.

Step 2CREAM together : oil, sugar, 3 eggs. ADD : carrots, pineapple, coconut.

Step 3another bowl, MIX DRY INGREDIENTS, until blended.

Step 4MIX dry with wet ingredients together. POUR into baking dish, and BAKE 45 minutes.
