I made this for my wedding cake top layer (I do wedding cakes)then took it with us on our 4 day honeymoon in 2001 to Longbeach, WA. Every nite ate our cake for desert.

Ingredients

  • 1 1/2 cups oil
  • 2 cups sugar
  • 3 large eggs
  • 2 cups carrots, grated
  • 1 cup pineapple, crushed, drained
  • 1/2 cup coconut, flaked
  • 2 1/2 cups all purpose flour
  • 1 cup chopped nuts
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamin
  • 1 teaspoon vanilla

How To Make carrot cake hawaian style

  • Step 1
    HEAT OVEN 350, Grease 9 X 13 baking dish.
  • Step 2
    CREAM together : oil, sugar, 3 eggs. ADD : carrots, pineapple, coconut.
  • Step 3
    another bowl, MIX DRY INGREDIENTS, until blended.
  • Step 4
    MIX dry with wet ingredients together. POUR into baking dish, and BAKE 45 minutes.
