Here is a moist and rich carrot cake my family loves. My husband asked for my homemade carrot cake a few weeks ago and I couldn't find my recipe anywhere. I remembered a couple days ago that I had played musical cookbooks with my mom and son a year or so ago so today when I was at my mom's I asked here if I could look at the cookbook we had swapped and presto there's my carrot cake recipe. This is an awesome recipe especially if you don't like pineapple, nuts, or raisins in your cake.

Ingredients
- 2 cups all purpose flour
- 2 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups finely shredded carrots
- 1 cup oil
- 4 - eggs
How To Make carrot cake

Step 1Grease and flour a 13x9x2-in. baking pan (or two 9x1 1/2-in. round baking pans).

Step 2In a mixer bowl combine the first 6 ingredients. Add next 3 ingredients, beating with electric mixer until combined. Beat on medium speed for 2 minutes. Turn into pan(s).

Step 3Bake in a 325 degree oven for 50 to 60 minutes in a 13x9x2-in.pan or until done. (For two 9-inch layers, bake in 325 degree oven for 40 minutes or until done.)

Step 4Cool on wire rack. (Remove layers from pans after cooling 10 minutes.) Cool well.
