This recipe came from my grandmothers recipe box. She use to make it all the time. I would stop and visit with her on the way home from school. I always walked home and she would watch for me to go by and invite me in for a piece of cake and glass of milk. She is the reason I love to bake. I wish I could still share recipes with her now.

Ingredients
- 2 cups sugar
- 1 1/2 cups canola oil
- 4 - eggs
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3 cups finely grated carrots
- 1/2 cup coconut, shredded
- 3/4 cup chopped pecans
- CREAM CHEESE FROSTING
- 3 ounces cream cheese, room temperature
- 1 3/4 cups powdered sugar
- 1 stick butter, room temperature
- 1 teaspoon vanilla extract
How To Make carrot cake

Step 1Preheat oven to 325. Mix sugar and oil till creamy. Add eggs one at a time. Mix well.

Step 2Sift together in a bowl, flour, soda, salt, and cinnamon. Add to first mixture. Beat till smooth. Stir in carrots, coconut and nuts. Pour into greased 9x13 pan. Bake at 325 for 55 minutes or until toothpick come out clean. Let cool completely then ice with cream Cheese Frosting.

Step 3Cream Cheese Frosting- combine all ingredients and mix till smooth. Ice cooled cake.
