Like carrot and raisin salad for summer and had the idea of making a cake instead.

Ingredients

  • 1 box carrot cake mix - i like betty crocker
  • 1 can pumpkin -not the pie filling
  • 1/2 cup plumped raisins - can add more

How To Make carrot and raisin cake

  • Step 1
    Mix all together. Put in cake pan. I use Demarle silicon bakeware so I don't have to grease or spray the pan. If you are using a regular pan you will need to spray or grease it.
  • Step 2
    Bake at 325 degrees for about 30 min or until toothpick comes out clean. (Note 350 deg for light colored pans.)
  • Step 3
    Let cook and then unmold by turning upside down on to a cake plate. I like to frost with a light cream-cheese frosting. But many like it without frosting or with just a sprinkle of powdered sugar.
