Camano Island is a small island just North of Seattle. This version of an upside down cake was a huge hit at family gatherings. Easy to make and a real crowd pleaser. I don't know about everybody else, but I have a bumper crop of Rhubarb in my garden this year. Already made pies and stewed Rhubarb, here is another idea to put it to good use.

Ingredients

  • 5 cups cut up rhubarb
  • 1 cup sugar
  • 1 package raspberry jell-o <3 ounce package>
  • 3 cups miniature marshmallows
  • 1 package white or yellow cake mix

How To Make camano island dessert

  • Step 1
    Cut and arrange fruit in 9 X 13 Greased baking dish.
  • Step 2
    Sprinkle sugar and gelatin (dry do not add water) evenly over top of fruit. Evenly layer marshmallows over the top of sugar and gelatin.
  • Step 3
    Follow directions on box and prepare cake mix. Pour over fruit and marshmallow mixture making sure all the marshmallows are covered.
  • Camano Island Desert Ready to eat
    Step 4
    Bake at 350 degrees for 50 minutes. COOL COMPLETELY!!!!! Turn upside down on tray. Serve with whipped cream or ice cream
