cake-in-mug (almond cherry sour cream cake-in-mug)

This started out as a chocolate cake-in-mug, that my brother shared with me; as you can tell, it didn't stay that way! ;) Note: The cook time is actually 3 minutes, but the lowest number available is 5 minutes.

Ingredients

  • 9 tablespoons flour
  • 6 1/2 tablespoons granulated sugar
  • 1 - egg
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 1/2 teaspoon vanilla extract (i use tahitian when i can)
  • 2 teaspoons (heaping) sour cream (optional)
  • 1 teaspoon almond extract
  • 1/2 teaspoon cherry extract
  • 1/4 teaspoon baking soda
  • pinch - salt (1/8 to 1/4 tsp)
  • - dried cherries (approximately 1/2 handful)

How To Make cake-in-mug (almond cherry sour cream cake-in-mug)

  • Step 1
    Combine flour & sugar
  • Step 2
    Add egg
  • Step 3
    Combine oil, milk, sour cream (if using) & extracts; mix thoroughly
  • Step 4
    Pour into flour/egg mixture
  • Step 5
    Mix well (with out the sour cream, the batter will be a little thicker than with)
  • Step 6
    Pour into large soup/coffee mug
  • Step 7
    Sprinkle dried cherries on top of batter (they should sink in while cooking.
  • Step 8
    Place in microwave (I always place a paper towel or paper plate under)
  • Step 9
    Cook 3 - 4 1/2 minutes
  • Step 10
    Cake will rise over top of mug
  • Step 11
    Insert knife in center to test doneness (Note: outside of cake will appear spongy & moist; inside will be done)

    Empty onto plate & enjoy (I usually enjoy plum-raspberry jam with this on top)
