My youngest loves anything blueberry and I was proud to wake him up this morning with some blueberry love. These cupcakes are truly bursting with flavor and delicious! These cupcakes are amazing! No one will guess they start with a boxed cake mix. The smell is so fragrant your kitchen is going to smell amazing. Blueberry flavor shines in each layer of the cupcakes. Super moist the cupcake has fresh blueberries in every bite. The frosting is sweet but full of luscious blueberry essence. Not only are these tasty, but they also make for a beautiful display.

Ingredients For bursting blueberry cupcakes~robynne

  • 1 box
    white cake mix
  • 1 tsp
    butter extract
  • 3 tsp
    blueberry extract
  • 6 oz
    fresh blueberries
  • 1 c
    butter, softened
  • 3 c
    powdered sugar
  • 2 Tbsp
    half & half
  • 1 tsp
    clear vanilla extract
  • 2-3 tsp
    blueberry extract
  • 1/2 tsp
    butter flavor extract
  • 1/8 tsp
  • 1/4 tsp
    cream of tartar
  • blueberry pie filling
  • fresh blueberry

How To Make bursting blueberry cupcakes~robynne

  • Prepared cake mix with blueberries folded in.
    Prepare cake as directed. Mix in butter and blueberry extracts. Add fresh blueberries, and mix by hand gently.
  • Batter poured into cupcake tins.
    Fill lined cupcake liners 3/4 full with blueberry cake batter. Bake as directed. Allow to cool completely.
  • Prepared frosting in a bowl.
    Add all of the frosting ingredients to a large bowl and mix until fluffy. I recommend you adding the extracts a little at a time, to achieve your desired flavor preference.
  • Cupcakes frosted with pie filling and fresh blueberry.
    Frost cupcakes. Dab the pie filling on top and finish with a fresh blueberry.
