- 1 - 19.9 oz pkg brownie mix
- 1 large egg
- 1 cup shredded zucchini
- 1/2 cup applesauce, unsweetened
- 1 - 1.4 oz pkg sugar-free, fat-free instant chocolate pudding mix
- 1-1/2 cup fat-free milk
- 1/2 cup fat-free cool whip, thawed
How To Make brownie-mousse mini cups

Step 1Heat oven to 350. Lightly spray 16 small muffin cups in cupcake pans w/ cooking spray.

Step 2In bowl, combine first 4 ingredients and 1 tbsp water. Mix well. Divide evenly among the cups. Bake 15 min, or until a toothpick inserted in center comes out clean.

Step 3Let mini cups cool. In bowl, whisk together pudding mix and milk. Spread evely over each mini cup. Top w/ cool whip.
