I always love eggnog. So, I created a brownie cake recipe with eggnog as a frosting.

  • CAKE
  • 2 c
    milk chocolate chips
  • 1 box
    fudge brownie mix
  • 1/4 c
    water
  • 1/2 c
    vegetable oil
  • 2
    egg whites
  • 3 tsp
    malted milk powder
  • 3/4 c
    chilled nonalcoholic eggnog
  • EGG NOG FROSTING
  • 1
    container frozen whipped topping, thawed and divided
  • 3/4 c
    half and half
  • 2 tsp
    pure vanilla extract
  • 1 1/2 c
    chilled nonalcoholic eggnog
  • 8 oz
    cream cheese, softened
  • 2 Tbsp
    cinnamon sugar, divided

How To Make brownie layer cake with egg nog frosting

    Preheat oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray. Add milk chocolate chips to both cake pans.

    Beat brownie mix, water, oil and egg whites in a large bowl for 2 minutes or until combined. Stir in malted milk powder and eggnog.

    Pour the brownie batter into prepared cake pans. Bake for 30 minutes or until a toothpick inserted the center comes out clean. Cool completely for 10 minutes.

    In a medium bowl, combine half the whipped topping, the half and half, vanilla extract, eggnog and cream cheese; whisk well for 3 minutes. Fold remaining whipped topping to eggnog mixture until creamy and smooth.

    Place the first layer of brownie cake on a serving plate. Spoon some frosting evenly over top. Sprinkle on 1 tablespoon cinnamon sugar.

    Top with second layer of brownie cake. Spread the remaining frosting over the sides and top of the cake. Sprinkle remaining cinnamon sugar all over the cake.

    Cover and refrigerate for 4 hours before serving.
