betty's super basic orange cake
When you have an abundance of oranges on the tree and lunch boxes to fill. This is the most simple orange cake recipe and it always works. Store in an airtight container for up to 4 days. Can be frozen if un-iced.

Ingredients
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 2 eggs
- 1 1/2 cups sr flour
- 1 teaspoon grated orange rind
- 1/2 cup orange juice (grate the rind first, then juice)
How To Make betty's super basic orange cake

Step 1Pre-heat oven to 355oF/180oC and well grease and line a square cake tin.

Step 2Cream butter and sugar. Add the eggs and orange rind - beat to combine.

Step 3Add the flour alternatively with the juice. Pour into the cake tin and bake for 40 minutes (or until cooked when checked with a toothpick).

Step 4Cool in tin for 15 minutes and turn out on to a wire rack. Cool completely and ice with either a citrus or chocolate icing.
