1Preheat oven to 350 degrees.
Oil and flour 2 - 9x5x3 inch loaf pans.
2Cream together the sugar and shortening until smooth and creamy. Add the eggs one at a time.
3Add the baking powder, salt, flour, cinnamon and vanilla, and mix thoroughly. Add 1/2 the nuts to the batter and mix just another couple of seconds. The dough will be sticky.
4Pour the batter into the baking pans (I weigh them, but it's your choice, you can eyeball it).
Sprinkle remaining nuts on top of each loaf and bake for one hour, or until a toothpick stuck into the center comes out clean. Be careful not to overcook the bread. The eggs and bananas will give you some wiggle room on the cook time.
