This is the best banana bread! Everyone who tries it asks for the recipe.

  • 1 c
  • 2 c
    white sugar
  • 4 large
  • 1 1/2 c
    ripe, mashed bananas (the riper, the better)
  • 2 tsp
    baking powder
  • 1 tsp
  • 2 1/2 c
    all purpose flour
  • pinch
  • 1 tsp
    vanilla extract
  • 2 Tbsp
    rum (optional, but highly recommended. try it with captain morgan)
  • 1 c
    walnuts or pecans (optional)

How to Make Best Ever Banana Bread


  1. Preheat oven to 350 degrees.
    Oil and flour 2 - 9x5x3 inch loaf pans.
  2. Cream together the sugar and shortening until smooth and creamy. Add the eggs one at a time.
  3. Add the baking powder, salt, flour, cinnamon and vanilla, and mix thoroughly. Add 1/2 the nuts to the batter and mix just another couple of seconds. The dough will be sticky.
  4. Pour the batter into the baking pans (I weigh them, but it's your choice, you can eyeball it).
    Sprinkle remaining nuts on top of each loaf and bake for one hour, or until a toothpick stuck into the center comes out clean. Be careful not to overcook the bread. The eggs and bananas will give you some wiggle room on the cook time.
