I'm always looking for ways to lower the calorie content of my recipes. This has been making the rounds on Facebook and I thought it would be pretty easy to switch out & it didn't change the taste at all! A real winner! And so easy to make.

Ingredients

  • 1 box yellow cake mix
  • - ingredients to make cake mix
  • 2 boxes sugar free banana creme pudding mix
  • 4 cups 1% milk
  • 8 ounces fat free whipped topping
  • 20 - low fat vanilla wafers (crushed)
  • - banana slices

How To Make banana poke cake

  • Step 1
    Prepare the cake mix as directed on box (I used applesauce instead of the vegetable oil. The box called for a 1/3 cup, I used 1/3 cup of applesauce.) Bake in a 9x13 pan as directed on the box.
  • Step 2
    Let cake cool for a few minutes and then poke holes in the cake with the handle of a wooden spoon. Let cake cool completely before continuing.
  • Step 3
    Whisk both boxes of pudding mix with 4 cups of milk. Pour over top of cooled cake. Try to push the pudding into the holes that you made with the wooden spoon. Spread whipped topping over pudding.
  • Step 4
    Crush the 20 vanilla wafers and sprinkle over cake. Slice bananas and put on top of cake. Refrigerate until serving time & keep leftovers refrigerated.
