I'm always looking for ways to lower the calorie content of my recipes. This has been making the rounds on Facebook and I thought it would be pretty easy to switch out & it didn't change the taste at all! A real winner! And so easy to make.

How to Make Banana Poke Cake

Step-by-Step

  1. Prepare the cake mix as directed on box (I used applesauce instead of the vegetable oil. The box called for a 1/3 cup, I used 1/3 cup of applesauce.) Bake in a 9x13 pan as directed on the box.
  2. Let cake cool for a few minutes and then poke holes in the cake with the handle of a wooden spoon. Let cake cool completely before continuing.
  3. Whisk both boxes of pudding mix with 4 cups of milk. Pour over top of cooled cake. Try to push the pudding into the holes that you made with the wooden spoon. Spread whipped topping over pudding.
  4. Crush the 20 vanilla wafers and sprinkle over cake. Slice bananas and put on top of cake. Refrigerate until serving time & keep leftovers refrigerated.
