banana oatmeal cake

This is the cake I made for dinner today. My family loved it. It is so moist and full of nuts and oatmeal. This is a great take along cake for a picnic or church supper.

Ingredients

  • CAKE:
  • 1/3 cup butter or margarine, softened
  • 1 1/2 cups granulated sugar
  • 6 ounces container of greek cranberry fig yogurt, or your favorite flavor
  • 3 medium over ripe bananas, mashed
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1 1/2 cups old fashioned oatmeal- more or less
  • FROSTING:
  • 1 - container of duncan hines creations starter frosting
  • 1 - packet of duncan hines creations caramel add in

How To Make banana oatmeal cake

  • Step 1
    Preheat oven to 375^. Spray a 9x13 inch baking pan. Set aside. --- Cream butter and sugar. Add eggs one at a time and beat well. Add mashed bananas and yogurt. Beat well. Combine and beat in the flour, baking powder, soda and salt.
  • Step 2
    Stir in nuts and oatmeal. Blend all well. Pour into prepared baking pan. Bake at 375^ for 30 minutes and then turn oven down to 350^ and bake for another additional 10-15 minutes - test with a tooth pick because all ovens bake differently . Remove from oven and cool completely.
  • Step 3
    Frosting: Combine the 2 ingredients in a small bowl and mix until well blended. Place in refrigerator until cake is cooled. Spread on cake . Serve alone of with ice cream. Enjoy!
