I hate bananas... but love banana bread! These banana muffins are easy for on the go snacking and help use up overly ripe bananas.

Ingredients

  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 2 - eggs
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 - bananas, mashed
  • 1/2 cup greek yogurt, vanilla non-fat
  • 1/ cup chopped walnuts (optional)

How To Make banana muffins

  • Step 1
    Preheat oven to 350 degrees F. Cream butter and sugar together until fluffy. Add the eggs and beat until well combined.
  • Step 2
    Add flour, baking soda and salt. Mix just until incorporated. Add banana and yogurt and mix until combined. Stir in walnuts.
  • Step 3
    Pour batter evenly among 18 lined cupcake tins. Bake for 25 minutes or until toothpick comes out clean.
