Great way to use overripe bananas.
This is a very moist heavy cake. Great flavor. My husband doesn't care for " tea" breads but he does likes cakes.

  • 1 1/2 c
    granulated sugar
  • 1 c
    sour cream
  • 1/4 c
    butter, room temperature
  • 1 3/4 c
    mashed ripe bananas
  • 2 tsp
    vanilla extract
  • 2
  • 2 1/3 c
    all-purpose flour
  • 1 tsp
  • 1 tsp
    baking soda
  • 1/2 can(s)
    chopped walnuts (optional)

  • 2 can(s)
    confectioners' sugar
  • 1/4 c
    butter, room temperature
  • 1/4 c
  • 1 tsp
    vanilla extract
  • 1 tsp
    almond extract

How to Make Banana Cake


  1. Put all cake ingredients together in a large mixing bowl; Mix until all ingredients are mixed together ( batter will be thick )
  2. Pour into a greased 13 x 9 cake pan.
  3. Bake at 375 degrees or until a toothpick inserted in the middle comes out clean. ( 20-25 ) minutes.
  4. Cool in pan then frost. (Recipe follows)
  5. For frosting; cream butter and shortening together until creamy.
  6. Add vanilla and almond flavorings and mix until blended.
  7. Add the confectioners sugar and beat until smooth.
  8. Add enough milk to make frosting of spreading consistency.
  9. Frost your cake and enjoy!!
