Great way to use overripe bananas. This is a very moist heavy cake. Great flavor. My husband doesn't care for " tea" breads but he does likes cakes.

Ingredients
- 1 1/2 cups granulated sugar
- 1 cup sour cream
- 1/4 cup butter, room temperature
- 1 3/4 cups mashed ripe bananas
- 2 teaspoons vanilla extract
- 2 - eggs
- 2 1/3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 can chopped walnuts (optional)
- VANILLA FROSTING
- 2 cans confectioners' sugar
- 1/4 cup butter, room temperature
- 1/4 cup shortening
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- - milk
How To Make banana cake

Step 1Put all cake ingredients together in a large mixing bowl; Mix until all ingredients are mixed together ( batter will be thick )

Step 2Pour into a greased 13 x 9 cake pan.

Step 3Bake at 375 degrees or until a toothpick inserted in the middle comes out clean. ( 20-25 ) minutes.

Step 4Cool in pan then frost. (Recipe follows)

Step 5For frosting; cream butter and shortening together until creamy.

Step 6Add vanilla and almond flavorings and mix until blended.

Step 7Add the confectioners sugar and beat until smooth.

Step 8Add enough milk to make frosting of spreading consistency.

Step 9Frost your cake and enjoy!!
