Great way to use overripe bananas.
This is a very moist heavy cake. Great flavor. My husband doesn't care for " tea" breads but he does likes cakes.

Ingredients

1 1/2 c
granulated sugar
1 c
sour cream
1/4 c
butter, room temperature
1 3/4 c
mashed ripe bananas
2 tsp
vanilla extract
2
eggs
2 1/3 c
all-purpose flour
1 tsp
salt
1 tsp
baking soda
1/2 can(s)
chopped walnuts (optional)

VANILLA FROSTING

2 can(s)
confectioners' sugar
1/4 c
butter, room temperature
1/4 c
shortening
1 tsp
vanilla extract
1 tsp
almond extract
milk

How to Make Banana Cake

Step-by-Step

  • 1Put all cake ingredients together in a large mixing bowl; Mix until all ingredients are mixed together ( batter will be thick )
  • 2Pour into a greased 13 x 9 cake pan.
  • 3Bake at 375 degrees or until a toothpick inserted in the middle comes out clean. ( 20-25 ) minutes.
  • 4Cool in pan then frost. (Recipe follows)
  • 5For frosting; cream butter and shortening together until creamy.
  • 6Add vanilla and almond flavorings and mix until blended.
  • 7Add the confectioners sugar and beat until smooth.
  • 8Add enough milk to make frosting of spreading consistency.
  • 9Frost your cake and enjoy!!
