You can also use this batter to make muffins. Just increase the baking time to 23-25 minutes and once they come out of the oven sprinkle the tops heavily with the cinnamon sugar mixture.

    pumpkin puree
  • 1/2 c
    vegetable oil
  • 3 large

    pumpkin pie spices
  • 1 1/2 tsp
  • 1 1/2 tsp
    baking powder
  • 1 3/4 c
    all purpose flour
  • 2 Tbsp
    all purpose flour

    cinnamon sugar for coating

How to Make Baked Pumpkin Doughnuts


  1. Preheat oven to 350. Lightly grease 2 standard doughnut pans.
  2. Mix together the pumpkin, oil, eggs,sugar, spices, salt, and baking powder until smooth. Stir in flour just until smooth.
  3. Fill the wells of the doughnut pan 3/4 full. Bake the doughnuts for 15-18 minutes or until a toothpick comes out clean.
  4. Remove them from the oven and after a few minutes transfer to a rack to cool. while the donuts are still warm but no longer fragile, gently shake them in a bag with the cinnamon sugar mixture. Cool completely. Yields 12-15 doughnuts.
