You can also use this batter to make muffins. Just increase the baking time to 23-25 minutes and once they come out of the oven sprinkle the tops heavily with the cinnamon sugar mixture.

Ingredients

  • 1 1/2 cups pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/2 cups sugar
  • 2 teaspoons pumpkin pie spices
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 1 3/4 cups all purpose flour
  • 2 tablespoons all purpose flour
  • - cinnamon sugar for coating

How To Make baked pumpkin doughnuts

  • Step 1
    Preheat oven to 350. Lightly grease 2 standard doughnut pans.
  • Step 2
    Mix together the pumpkin, oil, eggs,sugar, spices, salt, and baking powder until smooth. Stir in flour just until smooth.
  • Step 3
    Fill the wells of the doughnut pan 3/4 full. Bake the doughnuts for 15-18 minutes or until a toothpick comes out clean.
  • Step 4
    Remove them from the oven and after a few minutes transfer to a rack to cool. while the donuts are still warm but no longer fragile, gently shake them in a bag with the cinnamon sugar mixture. Cool completely. Yields 12-15 doughnuts.
