applesauce walnut cake w/pumpkin mousse topping

I used the Duncan Hines version of the Applesauce Walnut Cake (found on the website: duncanhines.com) but changed it up a bit, using a packet of Dream Whip in the cake and the mousse. The cake was moist, airy for a Bundt cake. Not to mention the heavenly fragrance coming from the oven. Hope you try it and share your thoughts! Enjoy!

Ingredients

  • 1 package spice cake
  • 2 packages envelope dream whip whipped topping
  • 1-1/4 teaspoon cinnamon, ground
  • 4 large eggs
  • 1/3 cup oil
  • 1/2 cup pumpkin spice coffee creamer (liquid) or milk
  • 1/2 cup water
  • 1/2 cup chopped walnuts
  • 1/2 cup applesauce (i used the cinnamon type)
  • 1 package pumpkin spice jello instant pudding
  • 1-1/2 cup cold milk
  • 1 cup confectioners sugar
  • 2 tablespoons pumpkin puree
  • 1 teaspoon water

How To Make applesauce walnut cake w/pumpkin mousse topping

  • Step 1
    FOR THE CAKE: Sift together cake mix and 1 pkg. of the Dream Whip. To the dry mix ingredients, (in a stand mixer at low speed), add one egg at a time, then water, coffee creamer, oil, applesauce, walnuts; mix according to pkgs. directions
  • Step 2
    Grease and flour a bundt pan and bake at 350 for 38-45 minutes (depending on oven)or until toothpick in center comes out clean
  • Step 3
    FOR THE MOUSSE: 1 pkg. DREAM WHIP 1-1/2 cup cold milk 1 pkg.(4 1/2 cup serving size) Pumpkin Spice Jello Follow directions on the DREAM WHIP box for the "CHOCOLATE MOUSSE" preparation, chill. Spoon on top of cooled cake slice
  • Step 4
    FOR THE PUMPKIN GLAZE (using the glaze recipe from Sue H, found here on J-A-P): 1 cup sifted confectioners sugar 2 tblsp. pumpkin puree 1/4 tsp cinnamon Wisk together until well blended. Drizzle over top of cake before slicing and/or over cake slices
