applesauce fruit & nut cake

My mother came up with this wonderful fruit cake recipe. I think having the applesauce cake base and all of the nuts in it really makes it good to eat. It is so full of nuts and fruit that it does tend to be a little crumbly, but I have had people who don't like fruit cake try it and actually enjoy it. This recipe makes several small loaves. We give it to family and friends.

Ingredients
- 5 cups applesuace
- 2 cups sugar
- 1 1/2 cups canola oil
- 2-3 cups raisins
- 2 cups halved dates
- 2-3 pints mixed candied fruit
- 1 pint candied cherries
- 6 cups mixed nuts ( i use pecans, filberts, brazil nuts, almonds and walnuts )
- 5-6 cups flour
- 2 teaspoons baking soda
- 1 tablespoon baking powder
- 1 teaspoon salt
- 4 1/2 teaspoons cinnamon
- 1 1/2 teaspoons cloves, ground
How To Make applesauce fruit & nut cake

Step 1Mix applesauce, oil and sugar. Mix raisins, fruits and nuts in a separate bowl; set aside.

Step 2Mix flour thouroughly with other dry ingredients. Add to applesauce mixture, mixing well. Add fruit and nuts and mix well.

Step 3Spoon into baking pans and bake in 350 degree oven for about 1 hour and 15 to 30 minutes or until done.

Step 4Cool on racks. Wrap in plastic wrap until eaten.
