~ apple crumble cake ~
This apple cake recipe was shared by my friend Melinda. I tweaked it some by the addition of milk and enjoyed the outcome. I added my own yummy fudge like brown sugar frosting. Enjoy!

Ingredients
- 2 1/2 cups self rising flour
- 1 1/2 cups packed, brown sugar
- 1 cup vegetable oil
- 2 large eggs, lightly beaten
- 1 1/2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 3 medium granny smith apples, peeled and chopped
- GLAZE
- 7 tablespoons butter
- 2/3 cup brown sugar
- 1/4 teaspoon salt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 1/2 cups confectioners' sugar
How To Make ~ apple crumble cake ~

Step 1Preheat oven to 300 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray. In a large bowl, beat together the flour with the remaining ingredients, except for the apples. Mix well. It will be thick. Stir in the apples and spread into prepared dish.

Step 2Bake for 40 - 45 minutes or until pick comes out clean. Cool on cooling rack.

Step 3Make glaze. In a medium saucepan, melt butter, add salt and brown sugar and cook until sugar melts. Add milk and bring to a boil. Remove from burner and cool for about 5 minutes. Beat in the extract and sugar, making sure there are no lumps. If not thick enough for your liking, add a little more sugar until desired consistency is reached. Spread over cake while frosting is warm.
