This apple cake recipe was shared by my friend Melinda. I tweaked it some by the addition of milk and enjoyed the outcome. I added my own yummy fudge like brown sugar frosting. Enjoy!

Ingredients

  • 2 1/2 cups self rising flour
  • 1 1/2 cups packed, brown sugar
  • 1 cup vegetable oil
  • 2 large eggs, lightly beaten
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 3 medium granny smith apples, peeled and chopped
  • GLAZE
  • 7 tablespoons butter
  • 2/3 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups confectioners' sugar

How To Make ~ apple crumble cake ~

  • Step 1
    Preheat oven to 300 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray. In a large bowl, beat together the flour with the remaining ingredients, except for the apples. Mix well. It will be thick. Stir in the apples and spread into prepared dish.
  • Step 2
    Bake for 40 - 45 minutes or until pick comes out clean. Cool on cooling rack.
  • Step 3
    Make glaze. In a medium saucepan, melt butter, add salt and brown sugar and cook until sugar melts. Add milk and bring to a boil. Remove from burner and cool for about 5 minutes. Beat in the extract and sugar, making sure there are no lumps. If not thick enough for your liking, add a little more sugar until desired consistency is reached. Spread over cake while frosting is warm.
  • Step 4
    Once frosting is set, it time to cut and enjoy!
