This is another grandma recipe. I believe it was created to use up the granny smith apples that grew on the tree in her backyard.

Ingredients For apple cake
- CAKE:

4 lgapples, tart cooking, peeled, cored, and finely chopped

1 csugar

2/3 cbutter, melted

2eggs, beaten

2 tspvanilla extract

2 call-purpose flour

2 tspbaking soda

1/2 tspsalt

2 tspground allspice

2 tspground cinnamon

1 cpecans, chopped
- FROSTING:
-
8 ozcream cheese, softened
-
1/4 cbutter, softened

2 Tbsplemon juice
-
2 cpowdered sugar, sifted
How To Make apple cake

1For the cake, combine the chopped apple, 1 cup sugar, and 2/3 cup melted butter in a large bowl; stir well. Add eggs and vanilla, stirring well.

2Combine flour and the next 4 ingredients; add to the apple mixture, stirring well. Stir in the pecans. Spoon the batter into a greased 13x9x2 inch baking pan. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan on a wire rack.

3For the frosting, combine the cream cheese and 1/4 cup softened butter, beating well at medium speed of an electric mixer. Add the lemon juice and powdered sugar; beat until light and fluffy. Spread frosting on top of the cooled cake.
