I have this wonderful cookbook called "Green Market Baking Book" and i am slowly going through it and trying out the recipes...what I love about this book is that it is healthy!! The choices for baking are a better choice than white flours, corn syrups etc... I made this cake for a Prayer Meeting last night and it is so delicious!! Hope you enjoy it!!

Ingredients

  • 1 cup maple syrup
  • 3/4 cup brown rice syrup
  • 1 1/2 cups light tasting olive oil
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups unbleached ap flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 3/4 teaspoon salt
  • 4 1/2 cups peeled and chopped apples
  • 1 1/4 cups coarsely chopped walnuts or pecans
  • 1/2 cup raisins (optional)
  • GLAZE
  • 1/4 cup butter
  • 1/2 cup maple syrup
  • 1/2 cup heavy cream

How To Make apple cake

  • Step 1
    Preheat oven to 325 degrees Grease and flour a 9x 13 pan. Mix together well the maple syrup, brown rice syrup with the olive oil. Add eggs one at a time until well mixed. Set aside Mix the dry ingredients together and add the the syrup mixture. Mix well. Fold in apples nuts and raisins. Bake for one hour at least. Check for doneness when toothpick inserted comes out clean. While cake is baking and just about done mix your butter and maple syrup together in a little pot. Melt together on stove. Add the cream and bring to a boil. Boil , stirring constantly for 2 mins. Remove and let cool slightly. Once cake is done remove from oven and leave it in the pan. Poke it all over with a fork. Pour the glaze over evenly making sure to get some of that yummy stuff into all the little holes!! Good warm but also great the next day!! So moist!!
