Since going "gluten free", I've toyed with a few of my family's favorite holiday recipes. This one turned out to be a HIT at Christmas.

betty crocker gluten free yellow cake layer mix
3/4 c
pamela's gluten free baking & pancake mix (plus 2 tbls. to dust bundt pan)
3/4 tsp
1 tsp
cinnamon, ground
1/4 tsp
cloves, ground
1 stick
butter or margarine
1/2 c
apple sauce
1/4 c
2 tsp
vanilla extract
4 c
chopped apples (peeled)
1/2 c
walnuts (pieces)
1/2 c
raisins, plumped in hot water & drained
1 can(s)
betty crocker coconut-pecan frosting, divided


3 Tbsp
butter or margarine
3/4 c
powdered sugar
1 pinch
1/2 c
coconut (plus extra to sprinkle on cake)
reserved 1/2 can of frosting
colored sugar or sprinkles

How to Make Apple Bundt Cake (GF) with Coconut Pecan Frosting


  • 1Combine cake mix, Pamela’s, salt and spices
  • 2Stir in softened butter, apple sauce, water, vanilla, eggs and half of the canned frosting
  • 3Beat on low for 30 seconds to combine, then on high for 2 minutes, scraping bowl occasionally.
  • 4Stir in apples, nuts and raisins just until blended.
  • 5Put in a greased and “dusted” Bundt pan and bake at 325 degrees for 45 minutes or until cake starts to pull away from the sides of the pan.
  • 6Remove from oven and let rest for 10 minutes. Turn out onto serving plate. Drizzle with frosting when completely cool.
  • 7---FROSTING---
  • 8Melt butter in saucepan over low heat. Add powdered sugar and salt; stir to combine.
  • 9Stir in reserved ½ can of frosting. Bring just to a rolling boil. Take off heat and stir occasionally to cool in pan -- about 10 minutes.
  • 10Drizzle frosting over cooled cake. Decorate with coconut and colored sugar or sprinkles
