These bars are a delicious change from the ordinary, and so easy..They are melt in your mouth wonderful..I used sliced almonds to sprinkle on the top, to give them some texture..they sure are delicious. Enjoy! My photos

Ingredients

  • CRUST
  • 2 cups flour
  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • FILLING
  • 1 - 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon almond extract ( i used 1/2 tsp ) this amount was perfect for us, we don't like a real strong almond flavor
  • 2 - eggs, lightly beaten
  • FROSTING
  • 1 - 1/2 cups confectioners' sugar
  • 1/4 cup butter. softened
  • 1 teaspoon almond extract ( i used 1/2 tsp ) this amount was perfect
  • 4 - 5 teaspoons milk

How To Make almond cheesecake bars

  • Step 1
    Preheat oven to 350 degree F. Spray a 9 x 13 baking pan with cooking spray.
  • Step 2
    Combine the flour, butter and confectioners' sugar; press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown.
  • Step 3
    For filling: In a small bowl, beat the cream cheese, sugar and extract until smooth. Add eggs; beat on low speed just until combined. Pour over crust. Bake for 15-20 minutes or until center is almost set. Cool on a wire rack.
  • Step 4
    Combine the frosting ingredients until smooth; spread over bars. Store in the refrigerator.
  • Step 5
    1 bar equals 145 calories, 9 g fat (5 g saturated fat), 35 mg cholesterol, 68 mg sodium, 15 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 1-1/2 fat, 1 starch.
