This recipe makes plenty for two or three people. In fact, even if you need to discard a couple waffles while trying to get the waffle iron to work for you, you will still have four big waffles for breakfast for two. White whole wheat flour makes very tasty waffles,

Ingredients
- WET INGREDIENTS
- 1 cup milk
- 2 large eggs
- 1/4 teaspoon vanilla extract
- 2 tablespoons melted butter
- DRY INGREDIENTS
- 1 cup flour (any kind)
- 1 tablespoon sugar
- 1/8 teaspoon salt
- 1 teaspoon baking soda
- FOR COOKING & EATING
- - butter-flavored spray
- soft butter
- maple syrup

Step 1Preheat waffle iron. For mine, set heat to 1.

Step 2Combine wet ingredients in blender. Blend until smooth.

Step 3Mix together wet & dry ingredients in a bowl and add to wet mixture. Blend until smooth, scraping down as necessary.

Step 4Pour mix into bowl for scooping onto waffle iron.

Step 5For each waffle: Spray iron with butter-flavored spray. Add about 1/3 cup batter to iron and close.

Step 6For my waffle iron: when red light on iron turns green, WAIT an additional 30 seconds before opening. Makes maximum 6 waffles.

Step 7To serve: divide waffles onto rimmed plates, put soft butter spread on each waffle. Stack an microwave 30 seconds. Pour maple syrup on each stack.

Step 8Clean-up: while iron is unplugged but still hot. place a multi-towel layer of wet paper towels in iron. Close and it will steam itself clean.
