spiced gingerbread waffles

A tasty treat for a holiday breakfast. Serve with maple syrup. Makes 4-6 waffles, depending on size of waffle iron. I have never made these on a Belgium waffle maker, so don't know if it would work.

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups buttermilk
  • 4 tablespoons butter, melted and slightly cooled
  • 2 large eggs
  • 3 tablespoons molasses
  • 1/2 teaspoon vanilla extract

How To Make spiced gingerbread waffles

  • Step 1
    Heat waffle iron.
  • Step 2
    In the meantime, whisk together flour, baking soda, baking powder, salt, sugar and spices. Set aside.
  • Step 3
    In a separate bowl, whisk together buttermilk, butter, eggs, molasses and vanilla.
  • Step 4
    Add wet ingredients to dry, whisking until smooth.
  • Step 5
    Coat waffle iron with cooking spray.
  • Step 6
    Pour batter into waffle iron and cook as per instructions (it’s usually called for to fill the waffle well about 3/4 full). Close and cook until waffle is golden and cooked through.
