I make this for my husband because he won't eat meat. I've become used to living with a vegetarian.

Ingredients

  • 112 cups flour
  • 114 cups cornmeal
  • 1 teaspoon salt
  • 1 cup fresh or frozen defrosted corn
  • 2 - eggs
  • 1 - egg yolk
  • 212 cups buttermilk
  • 2 cups shredded mozzarella cheese
  • - salsa
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda

How To Make corn waffles with mozzarella and summer salsa

  • Step 1
    Preheat oven to 375
  • Step 2
    In a large bowl, mix together flour, cornmeal, baking powder, baking soda.salt and corn.In a medium sized bowl, beat together the eggs and buttermilk. Stir the wet ingredients into the dry and mix well.
  • Step 3
    Heat a waffle iron iron iron and cook the waffles according to to instructions.Place cooked waffles on baking sheet.Sprinkle each with cheese and bake for 5 minutes or until cheese is melted. Spoon with salsa, serve immediately.
