- 1 cup fresh or frozen defrosted corn
- 2 - eggs
- 1 - egg yolk
- 212 cups buttermilk
- 2 cups shredded mozzarella cheese

- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

Step 2In a large bowl, mix together flour, cornmeal, baking powder, baking soda.salt and corn.In a medium sized bowl, beat together the eggs and buttermilk. Stir the wet ingredients into the dry and mix well.

Step 3Heat a waffle iron iron iron and cook the waffles according to to instructions.Place cooked waffles on baking sheet.Sprinkle each with cheese and bake for 5 minutes or until cheese is melted. Spoon with salsa, serve immediately.
