    flour
  • 114 c
    cornmeal
  • 1 tsp
    salt
  • 1 c
    fresh or frozen defrosted corn
  • 2
    eggs
  • 1
    egg yolk
  • 212 c
    buttermilk
  • 2 c
    shredded mozzarella cheese
  • ·
    salsa
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda

How to Make Corn Waffles with Mozzarella and Summer Salsa

Step-by-Step

  1. Preheat oven to 375
  2. In a large bowl, mix together flour, cornmeal, baking powder, baking soda.salt and corn.In a medium sized bowl, beat together the eggs and buttermilk. Stir the wet ingredients into the dry and mix well.
  3. Heat a waffle iron iron iron and cook the waffles according to to instructions.Place cooked waffles on baking sheet.Sprinkle each with cheese and bake for 5 minutes or until cheese is melted. Spoon with salsa, serve immediately.
