breakfast essentials: cornmeal waffles with chili

This is a very hardy breakfast, or lunch, or dinner… up to you. The recipe gives you the ingredients to make the cornmeal waffles, it is up to you what you top them with. My choice was chili, and a nice sunny-side-up egg. FYI: Because of how these waffles are made, they can be frozen, and reheated when needed. So, you ready… Let’s get into the kitchen.

Ingredients For breakfast essentials: cornmeal waffles with chili

  • 3/4 c
    whole milk
  • 1 lg
  • 3 Tbsp
    sweet butter, unsalted, melted
  • 3/4 c
    flour, all-purpose variety
  • 1/2 c
    cornmeal, yellow or white
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt, kosher variety
  • chili, your choice
  • 1 lg
    egg, sunny-side-up
  • 1 tsp
    ground cumin
  • 1 tsp
    frank’s hot sauce

How To Make breakfast essentials: cornmeal waffles with chili

    Gather your Ingredients (mise en place).

    Whisk the wet ingredients (milk, egg, melted butter), in a small bowl.

    Combine the dry ingredients (flour, cornmeal, baking powder, baking soda, and salt), in another bowl.

    Chef’s Note: Add the optional ingredients, if using.

    Add the dry ingredients to the wet.

    Whisk to combine.

    Allow the ingredients to rest for 10 minutes. This will give the cornmeal the chance to absorb some of the liquid.

    Prep your waffle iron.

    Add about a 1/4 cup of batter to the waffle iron.

    Chef's Note: The amount of batter used will be determined by the size of your waffle iron.
