breakfast essentials: cornmeal waffles with chili
This is a very hardy breakfast, or lunch, or dinner… up to you. The recipe gives you the ingredients to make the cornmeal waffles, it is up to you what you top them with. My choice was chili, and a nice sunny-side-up egg. FYI: Because of how these waffles are made, they can be frozen, and reheated when needed. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 3/4 cup whole milk
- 1 large egg
- 3 tablespoons sweet butter, unsalted, melted
- 3/4 cup flour, all-purpose variety
- 1/2 cup cornmeal, yellow or white
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt, kosher variety
- ADDITIONAL ITEMS
- - chili, your choice
- 1 large egg, sunny-side-up
- OPTIONAL ITEMS
- 1 teaspoon ground cumin
- 1 teaspoon frank’s hot sauce
How To Make breakfast essentials: cornmeal waffles with chili

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Whisk the wet ingredients (milk, egg, melted butter), in a small bowl.

Step 4Combine the dry ingredients (flour, cornmeal, baking powder, baking soda, and salt), in another bowl.

Step 5Chef’s Note: Add the optional ingredients, if using.

Step 6Add the dry ingredients to the wet.

Step 7Whisk to combine.

Step 8Allow the ingredients to rest for 10 minutes. This will give the cornmeal the chance to absorb some of the liquid.

Step 9Prep your waffle iron.

Step 10Add about a 1/4 cup of batter to the waffle iron.

Step 11Chef's Note: The amount of batter used will be determined by the size of your waffle iron.

Step 12Cook until nice and toasty.

Step 14Add some of your favorite savory toppings. I chose some good homemade chili, and a nice sunny-side-up egg. Enjoy.
