shara's " on the go" pancake muffins

My daughter is always rushing about on Sunday mornings to get the 3 kids ready to go to church, and that means breakfast is sometimes not on the menu, lol. So she made these one morning to see how they'd go over with the kids, and they loved them. I think it's an awesome idea!!

Ingredients

  • 1-3/4 cup heart healthy bisquick baking mix
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon ground flaxseed
  • 1/2 cup real maple syrup
  • 2 large ripe bananas, sliced

How To Make shara's " on the go" pancake muffins

  • Step 1
    Heat oven to 350. Spray a 12-cup muffin tin w/ cooking spray.
  • Step 2
    In lg bowl, whisk together baking mix, ground flaxseed, milk , eggs and maple syrup until mixed well. Pour 1/4 cup mix into each muffin cup. Place a slice of banana on top.
  • Step 3
    Bake about 20 mins, or until light golden brown. You can substitute other fruits as you like. These are great for kids when you're on the go.
