My daughter loves red velvet cake and loved these pancakes also. I never told her she was eating beets.

Ingredients

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons cocoa powder
  • 1/4 cup brown sugar
  • 2 - eggs, beaten
  • 1 teaspoon vanilla
  • 1(8.8 oz.) package love beets, minced
  • 1 cup whole milk
  • 2 tablespoons melted bbutter
  • - powdered sugar or maple syrup for garnish (optional)

How To Make red velvet pancakes

  • Step 1
    preheat griddle to medium high.
  • Step 2
    In a large bowl, combine flour, salt, baking powder and cocoa powder.
  • Step 3
    In a small bowl, combine sugar, eggs and vanilla.
  • Step 4
    In a blender, combine beets and milk. Process until smooth.
  • Step 5
    Pour the beet mixture into the bowl with the egg mixture and combine.
  • Step 6
    Next, transfer all the wet ingredients into the bowl with the dry ingredients. Mix just until incorporated.
  • Step 7
    Grease the griddle with butter. Pour 1/4 cup of batter on the griddle and cook for about 3 to 4 minutes per side.
  • Step 8
    Dust with powdered sugar or drizzle with maple syrup if desired. (Or as my daughter prefers, both.)
