Ingredients For pikelets

  • 1 1/2 cups self rising flour
  • 1/4 tsp baking soda
  • 1/16 tsp salt
  • 1/4 cup caster sugar, fine white
  • 1/2 tsp cinnamon
  • 1 tsp fresh lemon, rind, grated fine
  • 1 large egg
  • 1 1/4 cups whole milk
  • 1 1/2 tsp pure vanilla extract
  • 5 tsp melted butter
  • butter for serving (garnish)
  • syrup or fruit (garnish)

How To Make pikelets

  • 1
    In a large bowl, sift together the flour, baking soda, salt, sugar, cinnamon and lemon zest into a large bowl and mix well.

    In a smaller bowl add the egg, milk, vanilla and butter, mix well.

    Now make a well in the center of the bowl with the flour mixture and slowly add in the milk mixture and whisk until smooth.

    Don't crowd the pan, take the time and cook a few at a time. You will get tasty pikelets. Heat a pan over medium heat and add butter for frying; then pour a small amount of the batter into the pan and cook for 3 - 4 minutes.

    Serve warm with a pat of butter and syrup or toss some of your favorite fruit into the mix. Enjoy!
