I love pancakes and this is one of my personal favorites. Perfect as is, or served with lemon juice, icing sugar, apple preserves or raspberry/strawberry jam. No matter how you try it, you will love it.

Ingredients
- 2 large eggs, beaten
- 1/2 cup white flour
- 1/2 teaspoon salt
- 1 tablespoon white sugar
- 1/2 cup whole milk
- - butter, for frying
- - lemon wedge, to garnish
- - icing sugar, to garnish
- 2 tablespoons butter, melted, to coat sides and bottom of pan
How To Make pancakes

Step 1Preheat oven to 450 degrees F.

Step 2Break the eggs into a large bowl and beat well. Add the flour, salt and sugar, mixing well.

Step 3Slowly add the milk, blending until smooth. Let set for 10 - 15 minutes on the counter. Allow your oven to continue to preheat while your batter sits.

Step 4Melt the butter in a pan, making sure to coat the sides and bottom of the pan.

Step 5Quickly pour the batter into the hot prepared pan and bake for 12 - 15 minutes.

Step 6Serve warm with fresh squeezed lemon juice and powdered sugar.
