I made the batter the night before and baked them in the morning. These were enjoyed by my family and I will make them again .These were crunchy and so delicious..Oh and if you don't have a waffle iron, you can make them into pancakes easily. Making the batter the night before makes these waffles /pancakes a breeze to make...the toppings are very delicious and fresh berries can be added if desired on top....enjoy
Combine the flour, cornmeal, salt, cinnamon , brown sugar and baking soda whisk to blend. Set aside a minute.
In another bowl beat the 2 egg YOLKS only then add the buttermilk and melted butter to them,mixing well.
2Using a wooden spoon,add the flour mixture to the buttermilk mixture Stir until combine well. Set aside.
3Beat the 2 egg whites until soft peaks form , then fold into the batter; just until no white is showing.
4In your preheated waffle iron,bake according to your waffle maker directions. To serve:
Spread waffle with brown sugar butter.
5Then drizzle with lots of Sour Cream Sauce and enjoy.
