I usually make these for my husband and children for Valentine's Day. But they are great anytime.

Making pancakes from scratch is so simple and these cherry vanilla pancakes will be delicious to wake up to. We love the presentation with the fruit topping and whipped cream. A nice change from syrup. The pancake itself is delicious and they're made silver dollar size (smaller). There is a slight vanilla flavor that's different than what you'd find with pre-made pancake mix. These will be delicious for a special occasion but easy enough you can have them all the time.

Ingredients For cherry-vanilla pancakes

  • 1 1/2 c
    flour **sift before measuring
  • 1 tsp
    salt
  • 3 Tbsp
    sugar
  • 1 3/4 tsp
    double acting baking powder
  • 2

  • 3 Tbsp
    melted butter
  • 1 1/4 c
    milk
  • 1 tsp
    vanilla
  • 1 can
    cherry pie filling
  • whipped cream
  • powdered sugar (optional)

How To Make cherry-vanilla pancakes

  • Sifting flour.

    Sift the flour before measuring.
  • Resifting the flour with salt, sugar, and baking powder.

  • Egg beaten in a bowl.

    Lightly beat the egg.
  • Milk, butter, vanilla, and egg added to the flour mixture.

  • Stirring until just combined.

    Stir only until blended. Do not over mix.
  • Heating the pan.

    Heat a griddle or large skillet over medium heat.
  • Spraying pan with non-stick spray.

    Spray lightly with non-stick cooking spray. (Or if you prefer you can lightly oil or use melted butter.)
  • Batter spooned into the pan.

    Spoon 2-3 tablespoons of batter into griddle or skillet for each pancake.
  • Bubbles forming on the pancakes.

    Let cook until bubbles form. Then flip the pancake carefully.
  • Pancake flipped to cook other side.

    Cook other side until pancake is done.
  • Cherry pie filling spooned over pancakes.

    To serve, stack the pancakes on a plate. Spoon cherry pie filling over the top of the pancakes. Add whipped cream on the top. Sprinkle with powdered sugar if desired.Serve immediately.
