blueberry-chocolate protein pancakes

Ingredients
- 2 cups liquid egg whites
- 2 cups low fat cottage cheese
- 2 cups uncooked quaker oats
- 4 teaspoons stevia
- 1 cup blueberries, fresh
- 1 cup semi-sweet chocolate chips
- 2 pinches cinnamon
How To Make blueberry-chocolate protein pancakes

Step 1Add all ingredients, except blueberries and semisweet chocolate chips into a blender. Blend until smooth, then pour into a bowl. Fold in semisweet chocolate chips.

Step 2Add avocado oil (or avocado oil cooking spray) to a medium non-stick skillet (be sure skillet is non-stick or blueberries and chocolate will stick) and place on medium-high heat. (You can use olive oil as an option). Once oil is hot, scoop in mixture and add fresh blueberries on top of each pancake, flip once bubbles form on top and bottom is brown.

Step 3Cook until brown on both sides, then remove from heat. Sprinkle with powdered sugar. (Serve with sugar-free or regular pancake syrup if needed). You can use fresh strawberries and white chocolate chips instead of fresh blueberries and semisweet chocolate chips as another option.
