Imagine paper thin pancakes that are quick and easy to make. You can create so many wonderful treats with this basic recipe and best of all, if you cover the batter and place it in the fridge, it will keep for 2 days. The possibilities are endless; fill the crepes with fruits, chocolate, caramel, coffee mousse, sweet fruit cream cheese, nuts, custard, pudding, creme fresh or whipped cream. Or go savory or gasp, combine sweet and savory. I see crepes with fresh blackberries, strawberries, mango slices and custard garnished with whipped cream, chopped almonds and mint in my future.

Ingredients For basic french crepes

  • 1 c
    milk
  • 1/4 c
    water
  • 2 lg
    eggs
  • 1/4 c
    melted butter
  • 1 tsp
    pure vanilla extract
  • 1 c
    white flour
  • 1 tsp
    white sugar
  • pinch
    salt
  • pinch
    nutmeg
  • 1/4 c
    butter (for frying)

How To Make basic french crepes

    In a small bowl mix together the flour, sugar, salt and nutmeg and set aside until needed.

    In a larger bowl add the eggs, milk, water and vanilla, beat with electric mixer. Add in the flour mixture mixing until smooth, then stir in the melted butter, mixing well.

    Lightly oil the frying pan and turn the heat to medium. Pour 2 tablespoon of batter into the pan and tip and rotate the pan to spread the batter as thinly as possible. Lightly brown on both sides; then fill and garnish with your desired toppings.
