basic french crepes
Imagine paper thin pancakes that are quick and easy to make. You can create so many wonderful treats with this basic recipe and best of all, if you cover the batter and place it in the fridge, it will keep for 2 days. The possibilities are endless; fill the crepes with fruits, chocolate, caramel, coffee mousse, sweet fruit cream cheese, nuts, custard, pudding, creme fresh or whipped cream. Or go savory or gasp, combine sweet and savory. I see crepes with fresh blackberries, strawberries, mango slices and custard garnished with whipped cream, chopped almonds and mint in my future.

Ingredients
- 1 cup milk
- 1/4 cup water
- 2 large eggs
- 1/4 cup melted butter
- 1 teaspoon pure vanilla extract
- 1 cup white flour
- 1 teaspoon white sugar
- pinch salt
- pinch nutmeg
- 1/4 cup butter (for frying)
How To Make basic french crepes

Step 1In a small bowl mix together the flour, sugar, salt and nutmeg and set aside until needed.

Step 2In a larger bowl add the eggs, milk, water and vanilla, beat with electric mixer. Add in the flour mixture mixing until smooth, then stir in the melted butter, mixing well.

Step 3Lightly oil the frying pan and turn the heat to medium. Pour 2 tablespoon of batter into the pan and tip and rotate the pan to spread the batter as thinly as possible. Lightly brown on both sides; then fill and garnish with your desired toppings.
