Imagine paper thin pancakes that are quick and easy to make. You can create so many wonderful treats with this basic recipe and best of all, if you cover the batter and place it in the fridge, it will keep for 2 days.

The possibilities are endless; fill the crepes with fruits, chocolate, caramel, coffee mousse, sweet fruit cream cheese, nuts, custard, pudding, creme fresh or whipped cream. Or go savory or gasp, combine sweet and savory.

I see crepes with fresh blackberries, strawberries, mango slices and custard garnished with whipped cream, chopped almonds and mint in my future.
