zucchini for breakfast

This is a great recipe to use shredded zucchini in your waffles or pancakes.

Ingredients

  • 1 cup bisquick baking mix
  • 1 cup flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 3 - eggs, beaten
  • 3 tablespoons vegetable oil
  • 1 cup finely shredded zucchini
  • 2 teaspoons vanilla

How To Make zucchini for breakfast

  • Step 1
    Whisk Bisquick, flour,sugar,baking powder and salt in a large bowl. Whisk milk, eggs, and oil in large bowl. Stir in zucchini, and vanilla until well blended. Stir into flour mixture until ingredients are moistened. Heat griddle to medium heat, lightly oil it. Pour about 1/3 c. batter onto griddle; Cook about 1 to 2 minutes on each side or until golden brown.
  • Step 2
    Note: Can make in a waffle iron too. Pouring about 1/3 c. batter in each square,section or heart shape.
